My Chocolate Chip Cookies


MY CHOCOLATE CHIP COOKIES
(light-coloured fluffy ones)

Ingredients
  • ½ c Butter (softened)
  • ½ c Coconut oil
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar *
  • 2 eggs
  • 2 tsp. vanilla
  • 2 3/4 cups flour
  • Pinch of salt
  • 1 tsp. baking soda
  • Semi-sweet chocolate chips (as little or as many as you want up to 12oz)
  • Chopped/crushed walnuts (same as above)
 
Instructions
Preheat oven to 350 degrees. Cream butter, sugar, and brown sugar until it is nice and fluffy. Add both eggs and vanilla and beat for an additional 2 minutes. Add baking soda, salt, and flour until cookie batter is fully incorporated. Finally add chocolate chips and walnuts until well distributed. The cookie batter should be somewhat thick. Drop about 2 tablespoons of dough or use a medium cookie scoop and plop the batter onto a baking sheet. Bake for 10-12 minutes until the cookies look done but NOT brown. Remove from heat and allow the cookies to stay on the cookie sheet for an additional 10 minutes (bakery secret to moist cookies). Allow the cookies to cool for at least 3 minutes before serving. Enjoy! Store with a piece of bread in an airtight container and switch the bread out as it gets stale.

*You can add up to 1 ½ c brown sugar but I think they’re awesome with less.
These don't get "chewy" but they are soft and perfect with or without milk.
